No-bun burgers with oven baked potatoes & veggies

Oh boy, do I have a treat for you! After this post, I expect a 2000% increase in readers because this recipe is just divine!! It’s with carrot, zuchini, broccoli, potato and beef or veggie burger: your choice! So, basically, it couldn’t get any healthier but it is amazing! This is what you do:

Preheat oven to 180 degrees celsius. Cut carrot and potato (with skin if organic, otherwise remove skin) in slices (potato slices should be half as thin as other veggie slices so they are done at the same time!). Put in pan of warm water and cook for about 10 minutes. During those 10 minutes, cut up slices of courgette and sprouts of broccoli. Place them in an oven dish. Pour about two tablespoons of olive or sesame oil over them and season with some salt and pepper. Drain the carrots and potatoes and toss them through the courgette and broccoli. If you are preparing a veggie burger that can be made in the oven then put the burger on top of the vegetables. Cover the oven dish with aluminium foil (you don’t have to seal it, just make sure the whole dish is covered so that the precious vegetables do not get burned). Place the dish in the oven and leave everything bake for about 20 minutes (it’s done when the potatoes are soft enough to break with a fork). Relax for 15 minutes or make yourself a nice cup of tea! If you are making a burger that needs to be fried, take 5 minutes to prepare this. When the vegetables and the burger are done, cut burger into smaller pieces and toss through the veggies. Serve and enjoy!
