Sweet Potato with Organic Pork and Steamed Veg

Having a good piece of organic meat once in a while is a good idea, not only because it tastes good, but especially for certain nutrients (such as vitamin B12, which is difficult to obtain from other foods). Besides, it’s not like every meal with meat has to be unhealthy – I make this meal rich in vegetables, yet delicious. The ingredients I use are organic and local whenever possible.

Sweet Potato with Organic Pork and Steamed Veg

Serves 4. Prep time: 60 minutes.

Sweet potatoes, 4 large
Broccoli, 1
Cauliflower, 1
Pork sausages, 8
Olive oil, 4 tbsp
Salt & pepper to taste

Instructions
Heat up the oven to 180 degrees Celsius. Thinly slice the sweet potatoes and spread them around in a baking dish. Sprinkle with olive oil, salt and pepper. Bake for 45 minutes. Chop the broccoli and cauliflower into large bite size pieces. Add 400ml of boiling water to a large pan, add the broccoli and cauliflower, turn up the heat to medium and cover with a lid. The broccoli and cauliflower will take about 20 minutes of steaming to get to the perfect point between crunch and softness.

For the pork sausages, use a pan, non-stick or otherwise with just a dab of oil. Fry the sausages on medium heat for 3 minutes on each side, until they are browned on the outside and well done on the inside (I always split one sausage in two just to make sure they are all well done ;)).

Serve 2 pork sausages per person with a large serving of broccoli, cauliflower and sweet potato.
