Quinoa Fritters with Carrot & Coriander

If someone close to you does not like the standard quinoa salads, that can make it difficult to incorporate this super awesome protein source into your weekly diet. Fortunately, I came across a great Quinoa Fritters recipe on MindBodyGreen.com.

After adjusting it a little based on the ingredients we already had in our kitchen, they still turned out pretty good! It’s like fried quinoa burgers, except vegetarian – and gluten free, and dairy free. Perfect as a light summer dinner, perfect as a lunch time snack and/or perfect for dipping into a warm vegetable soup!

These quinoa fritters are simple and quick to make. Plus, you can keep them refrigerated for a couple of days, and have them as a pre-made lunch or snack. I’ve tried it out and given it my Ana’s Bananas approval. Now here’s the recipe for you to judge for yourself and enjoy on these lovely summer nights.

Quinoa Fritters with
Carrot and Coriander

1 cup cooked quinoa
1 tbsp fresh coriander, chopped
1 medium carrot, grated
1 medium onion, finely chopped
1/4 cup quinoa flour
3 eggs
salt and pepper to taste
olive oil or coconut oil to fry on

Mix all the ingredients in a bowl. Warm up the oil in a pan and spoon out the fritters into the pan one by one. Place as many fritters as fit in your pan at the same time, but the edges of the fritters should not touch. Fry the fritters until golden brown on both sides. Enjoy!

*if using olive oil, fry the fritters on low/medium heat for 5-6 minutes on each side, if using coconut oil you can fry on higher temperatures i.e. on medium/high heat for 3 minutes on each side.

As amazing as these quinoa fritters are, they need a sauce to go with since they are not super juicy on their own. We recommend a delicious yogurt sauce (1 cup yogurt + 1 small garlic clove, minced + half a cucumber, finely sliced) or a spicy pepper dip (we used Oil&Vinegar’s Chilly dip which basically consists of spicy flakes which can then be mixed with olive oil to make a sauce). You could also try the mustard dip from mindbodygreen.com (see below), but we haven’t tried that one yet so can’t vouch for it!

On the other hand, if you have made a vegetable soup, quinoa fritters can be a perfect bread replacemen – dip your quinoa fritters into the soup and enjoy!
