Lunch Salad You’ll need after the Holidays (Great for the Immune System)

Alright people, it’s time to make 2015 awesome! Here’s a detox salad that helped me & my body fight off the negative effects of all the sugar indulged in over the holidays. There’s just been too much sugar and too little vitamins a bit too often in the holiday meals. This salad is a perfect detox lunch, because it:

1) is easy to prepare,
2) contains fresh (green) veggies,
3) is easy to bring along,
4) gives a feeling of satiety for hours.

Spinach is an important source of zinc. Zinc is an important mineral for a healthy immune system.

Bell pepper is a good source of vitamin C, equally important for a healthy immune system.

Avocado is a good source of healthy fats, that provide important support to our body, especially in winter time.

Try to make all ingredients organic if possible, if not possible, opt for organic spinach, bell pepper and olive oil, since these are otherwise very chemically treated.

Post-Holiday Lunch Salad

Fresh (baby) spinach leaves, 100g
Bell pepper, red, yellow or green, 1/4
Avocado, 1/2
Scallions, 2 small ones
Balsamico, 1 tbs
Virgin olive oil, 1 tbs
A pinch of salt & pepper

Wash the spinach leaves and drain them of excess water. In the meanwhile, cut the bell pepper into thin slices, thinly slice the scallions, and cube the avocado. Then place the spinach leaves in whatever dish you will be bringing with you to work, and add all the other ingredients. Mix well. By the time it’s lunch time, all the aromas and flavors will have mixed together into a delightful dressing. Enjoy your low calorie, low salt, heart healty and immune system supporting detox salad!

    Since you are writing this blog from your academic medical background, could you explain exactly what a “detox” is and what “toxins” are removed from your body by eating this lunch? Any scientific references would be appreciated.

    Hi Peter! Thank you for your interest and – what an excellent point! Just a few days ago I though how I should indeed write a post about what detox means – I believe many people are asking themselves the same question that you are asking here. Plus, the term detox is so hyped up, without really having a clear meaning to many people who use it. I am looking forward to writing about it in a soon-to-come post and I hope to answer your very valid questions there! I will notify you here when the post is up.
