Vegetarian Quiche with Broccoli & Goat Cheese

Vegetarian quiche are underrated. They are a healthy option compared to your regular quiche for several reasons. Plant-based, relatively low on fat, and filled with nutrients. It’s no wonder we love them! Make your own to assure you’re not getting in the high sugar and high salt content often found in pre-made quiches in supermarkets.

I use goat and sheep cheese instead of cow cheese, which according to some sources are more easily digested.

Serve as dinner alongside a green salad, or use it as your go-to snack by cutting it into small square pieces and storing in the fridge.

  1. PREHEAT THE OVEN TO 160 degrees Celsius. Butter an oven dish and spread the puff pastry over it as to make the quiche crust.
  2. WASH BROCCOLI AND ZUCCHINI, cut in small pieces. Finely chop the onion, then mix with broccoli and zucchini, and transfer all onto the puff pastry.
  3. SCRAMBLE 3 EGGS and mix with finely chopped garlic and sage. Cut cheese into cubes. Add cheese and egg mixture onto the vegetables, mix around so that all the ingredients are well spread out.
  4. BAKE IN THE OVEN FOR 50 - 60 minutes. Serve warm or cold, it's good either way.
