Rocky road is originally an Australian concoction, used to make rotten candy shipped from Europe still somehow attractive to customers – by mixing it all up into one big pile. Today, it’s a diabetes causing treat in the United States, typically made with milk chocolate, sugary candies and marshmallows.
This rocky road is healthy. What? Yes. I’ve prepared it multiple times for various medical departments and not once was I thrown out on the street because of how deliciously amazing it was – while sneakily being filled with nutrients. It melts on your tongue and satisfies every chocolate nerve in the body.

Ingredients
- 100 g dark chocolate minimally 70% cocoa content
- 30 g nuts (walnuts/almonds/pecans/hazelnuts) roughly chopped
- 20 g goji berries or cranberries
- 2 tbsp melted coconut oil
- 1 tbsp crushed line seed
- 2 tbsp coconut flakes

Instructions
- MELT THE CHOCOLATE and coconut oil au bain-marie (in a bowl above a pan with boiling water). When they've melted, stir and take off fire, then add all the other ingredients and mix through.
- POUR MIXTURE into a flat-bottomed dish covered by parchment paper (this will make the rocky road easy to take out once it's settled). Refrigerate for 2 hours or until the rocky road is set.
