Vegetarian quiche are underrated. They are a healthy option compared to your regular quiche for several reasons. Plant-based, relatively low on fat, and filled with nutrients. It’s no wonder we love them! Make your own to assure you’re not getting in the high sugar and high salt content often found in pre-made quiches in supermarkets. I use goat and sheep cheese instead of cow cheese, which according to some sources are more easily digested. Serve as dinner alongside a green salad, or use it as your go-to snack by cutting it into small square pieces and storing in the fridge.
