Chocolate & Dried Apricot Cake
HELLO THERE! IT HAS BEEN A TOUGH & BUSY WEEK. Since I’m somewhat of an emotional eater (who can resist a sweet bar of chocolate in times of stress? ), I was definitely craving a big old creamy, fudgy chocolate cake to stuff my face in by the time it was weekend. Just as I was about to buy a (definitely unhealthy) cake at the supermarket (what a no-no!), a great friend of mine agreed to meet up for a bake session and save me from myself. EATING THIS CAKE REALLY HIT THE SPOT. It’s a very rich cake, filled with almond flour, real apricots, cinnamon & cocoa powder. You…

Small Loaf of Spiced Carrot Cake with Cranberries and Walnuts
Guys, it’s my first time baking carrot cake – can you believe it? It turned out amazing, I love using moist vegetables in cakes. Up until now, I always grabbed the opportunity to indulge in my mom’s amazing carrot cake, or lazily order carrot cake whenever I’m at a cafe. Vegetarian Quiche with Broccoli & Goat Cheese
Vegetarian quiche are underrated. They are a healthy option compared to your regular quiche for several reasons. Plant-based, relatively low on fat, and filled with nutrients. It’s no wonder we love them! Make your own to assure you’re not getting in the high sugar and high salt content often found in pre-made quiches in supermarkets. I use goat and sheep cheese instead of cow cheese, which according to some sources are more easily digested. Serve as dinner alongside a green salad, or use it as your go-to snack by cutting it into small square pieces and storing in the fridge.
