Delicious, moist brownies chock-full of bitter-sweet walnuts. There’s wholegrain flour in the batter and deliciously crunchy almond flakes on top. I baked a batch this morning and I won’t lie to you – had 3 pieces as breakfast. Yum! Less sugar and more walnuts make this recipe the perfect alternative to traditional unhealthy desserts. These brownies are diabetes-friendly due to high fiber content and a lower glycemic index (making your blood sugars not raise as fast). Chocolate Rocky Road with Nuts & Berries
Rocky road is originally an Australian concoction, used to make rotten candy shipped from Europe still somehow attractive to customers – by mixing it all up into one big pile. Today, it’s a diabetes causing treat in the United States, typically made with milk chocolate, sugary candies and marshmallows. This rocky road is healthy. What? Yes. I’ve prepared it multiple times for various medical departments and not once was I thrown out on the street because of how deliciously amazing it was – while sneakily being filled with nutrients. It melts on your tongue and satisfies every chocolate nerve in the body. Print Recipe Rocky Road with Almonds & Berries…

Apple & Cinnamon Pastry #appelflap
AN “APPELFLAP” IS A TRADITIONAL DUTCH DESSERT PASTRY stuffed with apple, raisins, cinnamon and sugar, and covered with sugar granules. Lots of people have it for breakfast. In this recipe, I ditch the sugar and raisins and realise that homemade apple flaps are easy and delicious – while obviously being healthier than the supermarket version. Print Recipe Homemade Dutch 'Appelflap' Course Dessert Cuisine Dutch Prep Time 30 minutes Servings pieces Ingredients 2 apples, diced use Elstar or other sweet-sour type4 squares of about 15x15cm pastry dough store-bought, I find it in the freezer section, or homemade2 teaspoons cinnamon powder Course Dessert Cuisine Dutch Prep Time 30 minutes Servings pieces Ingredients…

Healthy Chocolate Recipes I found on the Internet + Music
There’s hardly a feeling more brilliant than dancing around the kitchen while making healthy chocolate snacks. On that note, I’d like to share my current favorite song with you: “Ties” by Years & Years. Heard of them through my ‘hip&happening’ prodigy Olivia, thanks girl! Also, these three great chocolate snack recipes I found on the internet. With(out) few added sugars, dairy-free and even gluten-free! Dark Chocolate Coconut Bites Bounty’s healthy alternative? Yes, please! I just love these juicy coconut bites. Thinking of taking some to my colleagues at the new workplace… maybe they’ll get lucky 😉 (I have a feeling some of them are reading the blog 🙂 ).…

Chocolate & Dried Apricot Cake
HELLO THERE! IT HAS BEEN A TOUGH & BUSY WEEK. Since I’m somewhat of an emotional eater (who can resist a sweet bar of chocolate in times of stress? ), I was definitely craving a big old creamy, fudgy chocolate cake to stuff my face in by the time it was weekend. Just as I was about to buy a (definitely unhealthy) cake at the supermarket (what a no-no!), a great friend of mine agreed to meet up for a bake session and save me from myself. EATING THIS CAKE REALLY HIT THE SPOT. It’s a very rich cake, filled with almond flour, real apricots, cinnamon & cocoa powder. You…

Kelis’ Milkshake with Banana & Cinnamon
Still clueless about what singer Kelis was referring to when singing about her milkshake bringing boys to the yard, I can assure you that this milkshake is better than hers. Use regular milk or a plant-based alternative as you see fit. Healthy milkshakes are a perfect cure for those nights when you fly in from work feeling tired and hungry. To not succumb to cravings, have a milkshake, then when the immediate hunger is silenced, get yourself together and enjoy cooking a proper meal. Small Loaf of Spiced Carrot Cake with Cranberries and Walnuts
Guys, it’s my first time baking carrot cake – can you believe it? It turned out amazing, I love using moist vegetables in cakes. Up until now, I always grabbed the opportunity to indulge in my mom’s amazing carrot cake, or lazily order carrot cake whenever I’m at a cafe. In the latter case I always look like one of those “my body is a temple” people, since I don’t like frosting (it’s non-organic dairy + sugar = boo!) and scrape it off with my fork to the side of my plate. So, there’s no frosting in this recipe. There is a bit of sugar – I did not succeed…

Banana Oatmeal Pancakes
FIRST OF ALL, I feel like my picture does not give these tasty pancakes enough credit – they are tastier than they look! THE BANANA OATMEAL PANCAKE RECIPE is my first ‘non-traditional’ pancake recipe (I found it here and altered it a little bit), making these pancakes gluten free and dairy free. No sugar is added in the recipe, meaning that all the sugars in the pancakes are natural sugars. For baking the pancakes, I used coconut oil. The ‘healthy’ Banana Oatmeal pancakes were Practically unrecognisable from ‘regular’ pancakes that we’ve all grown to love Great in texture Extremely easy to make Delicious!
