Healthy Lasagna

This healthy lasagna tastes yummy but actually contains lots more vegetables than you would guess! Garfield would have eaten it up in a flash – and so will your kids! 🙂

This is also a dairy free lasagna recipe, making this lasagna way less caloric and way healthier than your regular alternative.

Serves 4. Prep time: 60 minutes.

Beef, organic, minced, 300g
White onions, 2 medium ones, diced
Carrots, organic, 2 medium ones, cut in thin slices
Celery, 5 stalks, cut in thin slices
Tomatoes, 4 pieces, diced
Tomato sauce, organic, 200ml
Garlic, 2 cloves, finely chopped
Red pesto, 4 tbsp
Lasagna pasta sheets (store bought or homemade)
Cheese for topping, grated (optional)


Celery (if stores in the fridge rather than at room temperature) has been shown to protect the stomach lining through it’s anti-inflammatory effects, is full of flavonoids (type of anti-oxidants) and even has negative calories (digesting it takes more energy than the energy it provides), which makes it great for those trying to lose weight.
Carrots are a great source of (pro)vitamin A, as you probably knew already. But did you also know that (pro)vitamin A is better absorbed when carrots are cooked, and eaten with something fatty (since vitamin A is a fat-soluble vitamin). As an extra bonus – carrots are, among other foods with a deep shade of orange/yellow, the most protective of cardiovascular disease!

Garlic can help lower cholesterol levels but it’s important to note that it is the freshly crushed, and not the powdered garlic, that has cardiovascular benefits!

Preheat the oven to 180 degrees Celsius. Fry the minced beef in a pan on low heat (without oil!). When it is almost cooked (only a few uncooked bits left), add the carrots and onion to the same pan. Continue heating for about 5 minutes. Add the tomato sauce, garlic, celery and red pesto and take off the heat. Scoop one third of the mixture into a baking dish, cover with lasagna dough, scoop the second third, cover with lasagna dough, and then finally scoop over the final third on top – and over it a layer of cheese suiting your preference! Bake in the oven for 30-40 minutes (until cheese on top becomes golden brown). Enjoy!
