FIRST OF ALL, I feel like my picture does not give these tasty pancakes enough credit – they are tastier than they look!
THE BANANA OATMEAL PANCAKE RECIPE is my first ‘non-traditional’ pancake recipe (I found it here and altered it a little bit), making these pancakes gluten free and dairy free. No sugar is added in the recipe, meaning that all the sugars in the pancakes are natural sugars. For baking the pancakes, I used coconut oil.
The ‘healthy’ Banana Oatmeal pancakes were
- Practically unrecognisable from ‘regular’ pancakes that we’ve all grown to love
- Great in texture
- Extremely easy to make
- Delicious!
Banana Oatmeal Pancakes
Makes 10 medium-sized pancakes.
Prep time: 5 minutes, + baking time.
Dairy-free. Gluten-free. No added sugar.
Ripe bananas, 2 pieces
Rough oats, gluten-free, 1 cup
Eggs, 3
Almond milk, homemade or store-bought, 50ml
Cinnamon powder, 1 teaspoon
Coconut oil or butter for baking
1. Put all the ingredients in a blender and mix until smooth (about 15 seconds).
2. Warm up coconut oil or butter in a pan and bake your pancakes (pour half a cup of mix in a frying pan, spread around evenly, bake till solidified, then flip the pancake on other side, when browned it’s done!) 🙂
To serve alongside pancakes, my favorites are lemon curd, blueberries and bananas! If you’re a chocolate freak, you can melt 50g pure chocolate with 1 tablespoon coconut oil and half a teaspoon of natural vanilla, for a luxury chocolate sauce.
