Vegetarian Quiche with Broccoli & Goat Cheese
soft goat or sheep cheese
enough to cover the oven dish, I use ‘Tante Fanny’ fresh pastry
PREHEAT THE OVEN TO 160 degrees Celsius. Butter an oven dish and spread the puff pastry over it as to make the quiche crust.
WASH BROCCOLI AND ZUCCHINI, cut in small pieces. Finely chop the onion, then mix with broccoli and zucchini, and transfer all onto the puff pastry.
SCRAMBLE 3 EGGS and mix with finely chopped garlic and sage. Cut cheese into cubes. Add cheese and egg mixture onto the vegetables, mix around so that all the ingredients are well spread out.
BAKE IN THE OVEN FOR 50 – 60 minutes. Serve warm or cold, it’s good either way.
