  1. Place a grill pan on high fire and heat it up.
  2. Spread ham, cheese, avocado & fresh parsley evenly over each tortilla. Fold and glaze with olive oil on both sides.
  3. Heat for 2 minutes on both sides – press down in the pan using a spatula (or a plate) to make the quesadilla stick together.
Recipe Notes

Organic prosciutto can be quite pricey. Tip: buy best quality meat when possible, and compensate for the price by eating less meat in general (which will also be good for your health).

Organic prosciutto: better supermarkets or delis, at Ekoplaza or other organic stores, or at an organic butcher.

Organic cheese: better supermarkets or delis, at Ekoplaza or other organic stores, straight from the farmers.

Wholegrain tortillas: most supermarkets (I buy mine at Hoogvliet), or make your own.
