HEAT UP THE OIL OR GHEE in a pan and bake the bacon until slightly crispy. Remove from pan.
USE SAME PAN TO heat onion for 2-3 minutes, then add rice and stir for a 2-3 minutes until glazed.
ADD BROTH TO THE PAN, not all but at first just enough to cover the rice. Let simmer for about 10 minutes.
ADD MUSHROOMS AND GREEN PEAS to the pan, as well as more vegetable stock, again enough to cover the rice. Keep on adding broth as necessary, until the rice is soft. This usually takes about 10-15 more minutes of simmering.
WHEN DONE, take off heat, then add bacon and Parmezan cheese. Stir and serve accompanied by a fresh green salad or just a glass of water (or white wine).
