MELT THE CHOCOLATE and coconut oil au bain-marie (in a bowl above a pan with boiling water). When they’ve melted, stir and take off fire, then add all the other ingredients and mix through.
POUR MIXTURE into a flat-bottomed dish covered by parchment paper (this will make the rocky road easy to take out once it’s settled). Refrigerate for 2 hours or until the rocky road is set.
