  1. Dice fennel, onion and bell pepeprs into very small cubes, 1cm, the smaller the better (now there’s a phrase we don’t hear often).
  2. Half the cucumber lengthwise. Spoon out the seeds using a teaspoon. Then dice the cucumber into very small cubes, just like the rest.
  3. Chop up mint, coriander and green chili very, very finely. Mix up with lemon juice and Greek yoghurt.
  4. Mix everything together, sprinkle with nigella seeds and serve. Use leftovers for a light lunch the next day :).
