  1. IN A SOUP PAN, fry shallots on oil or ghee for 5 minutes on low fire.
  2. ADD ZUCCHINI AND BROCCOLI, top off with vegetable stock, then bring to a boil and let simmer for 20 minutes.
  3. TAKE OFF HEAT and blend with an immersion blender. Serve warm.
