Instructions
  1. HEAT UP THE OIL in a saute pan and when it gets hot, pour in the eggs and fry on medium heat until the egg whites and the yolks have settled.
  2. IN THE MEANWHILE, peel the avocado and place in a bowl. Add the lime juice and finely chopped cilantro to the avocado and mash up with a fork. Finely chop red chilli pepper to your liking if you like a spicy guacamole.
  3. IN A DIFFERENT BOWL, mix finely chopped tomato with finely chopped onion. Now you have your eggs, your guacamole and your tomato & onion salsa! You can also crumble some feta cheese if you like the flavor, or are in need of an anti-hangover brunch ;). Add finely sliced raddish if you’re in the mood for extra bite. TOP UP THE TORTILLA WRAPS WITH YOUR FAVORITE INGREDIENTS and enjoy.
