Boiled egg & Avocado Bread Spread
good sourdough bread
10 minutes is enough or hard-boiled, boil for 7 minutes if you like it softer
fresh ginger, peeled and grated
extra virgin olive oil
your favorite herbs
I use dried basil, thyme and oregano
salt and pepper to taste
CUT THE AVOCADO in half (cut around the pit) and then separate the two halves and scoop out the avocado flesh with a spoon. In a bowl, mash up with a fork.
MASH THE EGGS WITH AVOCADO. Use a fork and mash until a smooth mixture forms (chunks are okay!).
ADD GINGER and mix. Sprinkle with olive oil and seasoning. Enjoy on a slice of bread.
