  1. CUT THE AVOCADO in half (cut around the pit) and then separate the two halves and scoop out the avocado flesh with a spoon. In a bowl, mash up with a fork.
  2. MASH THE EGGS WITH AVOCADO. Use a fork and mash until a smooth mixture forms (chunks are okay!).
  3. ADD GINGER and mix. Sprinkle with olive oil and seasoning. Enjoy on a slice of bread.
