  1. Place the almonds and apricots in a food processor. Mix until turned into a paste. Add water if the mixture is too thick to churn.
  2. Spread coconut flakes out on a flat surface. Roll small balls of dough between your hands, then roll through the coconut. Repeat until the batter is finished (resist eating all the truffles as you go!).
  3. Place truffles on a plate and refrigerate for at least 1 hour so they set. Then indulge in these nutritious little truffles!
Recipe Notes

Dried apricots should be brown in color. The ones that look orange have been treated with sulphite in order to preserve their color. For non-sulphite treated apricots, buy dried apricots that are brown in color.
